Spanish Potatoes Recipe

Okay, there is no denying it, this Spanish potatoes recipe is not local to Northern Ireland! However, it uses potatoes so I’m thinking I can get away with it!

I actually came up with this recipe after buying a ready to cook convenience tray of Spanish Potatoes. They tasted quite yummy, so I just had a sneak peek at the ingredients and decided I would just make my own in future!

The quantities are only a rough guide. You could add the separate ingredients in whatever ratios you desired.

For my version you will need:

4 medium potatoes (peeled and diced into about 1cm squares)

1 red pepper (diced)

1 yellow pepper (diced)

1 onion (red or white) (diced)

2 tbsp paprika

juice of 1/2 lemon (if you don’t have this just leave it out)

1/2 tsp mild chilli powder

drizzle of olive oil

Preheat your oven to 180 degrees

Add your diced potatoes to boiling water and boil for 2-3 minutes

Gently drain the potatoes and pat them dry with some kitchen role

Add the potatoes, peppers and onion to an ovenproof dish

Add the paprika and chilli powder and mix until the vegetables are all coated

Drizzle over the lemon juice and the olive oil and mix gently again

Cook in the oven for around 40 minutes, until the potatoes are soft in the centre and browning on the outside

This Spanish potatoes recipe is so versatile and easy to adjust to your own personal taste I just love it! You can easily alter the amount and type of chilli used depending on your heat preference.  Alternatively, add more or less paprika, or even used smoked paprika to give the dish a smokey flavour.

Serve with a meat of your choice. This Spanish potatoes recipe goes with anything from sausages to steak, but I especially like them served with fish. Enjoy!
