My February So Far: Featuring Pancakes and Pink Tops

February so far, has been much better than January! I am feeling so much more energetic, and things are starting to get done around here! I have finally managed a coat of paint in our spare room, which means I can really get everything in it’s proper place! Or at least try to – I’m not sure if it is actually achievable!

Even though the mornings have been frosty, the blue skies lately have been welcome. There are even bunches of daffodils for sale in the shops. After months of grey I am more than ready for some colour, and treated myself to this top in the Matalan sale.

And of course we celebrated pancake day. I hadn’t intended to, but Lewis knew when he returned from school, and at his request we made some crepe style pancakes.

Aaron was not impressed with my efforts, and in the end he had a toasted Sunblest pancake from the freezer. Lewis and I managed to eat his share though. (You can find my recipe here.)

I also introduced Mr C to hot chocolate topped with marshmallows. Apparently he had never tried paring the two together before? Although it is a sweet combination, he agreed it makes a nice treat on a cold evening. (Especially if you use options hot chocolate – it’s only 40 calories!)

I am hoping the rest of this month is as enjoyable as the start. It’s half term break next week and then from the 18th – 28th is the Northern Ireland Science Festival, which has loads of really cool and interesting events for children and families. Hopefully we will be able to make it along to some of these.
