Back To School {Local Lunchbox Challenge with Tesco}

I got my first set of homework from school this week. Backing books! Eurghhh! Not my favourite past-time I must admit! The other chore that I don’t relish as a mum, is making up packed lunches every night. It’s so easy to get stuck in a rut and just send the same old same old, day after day. So when Tesco asked if I would like to partake in their Local Lunchbox Challenge, I was keen to see if they had any new ideas. Low Fat Garlic and Leek Macaroni

Low fat garlic and leek macaroni

I devised this low fat garlic and leek macaroni recipe after seeing a similar recipe on the slimming world website. Their version uses mustard and some other ingredients I didn’t want to use, so I came up with this. It is all part of a current effort to cut back on the calories. Of course this dish doesn’t taste much like my traditional macaroni cheese recipe, but it is still tasty and filling, and much healthier!

3 Simple Summer Watermelon Drinks Recipes

I love watermelons. Their gentle sweetness and slight crunch make them the perfect snack for a hot summer day. They are however quite huge, and I wanted to try something different, so I decided to create some watermelon drinks recipes, based on whatever ingredients I had at home.

I came up with 3 different drinks, and each one was delicious!  For each drink I had already de-seeded the watermelon, and removed the fruit from the skin. Here they are:

I so love growing some of my own fruit and vegetables. I do believe it also encourages my family to try foods that they would normally refuse. However last year I tried to get them to eat currants with their yoghurt, but they were just too tart for my families tastes. This year I decided to try a redcurrant and blackcurrant jam recipe, which I knew they would be unable to refuse.
