So good it could almost be classed as a local delicacy, stuffed bacon rolls are simple, cheap and delicious! There’s no big secret to them other than to make sure you use a breadcrumb stuffing. Below is a great way to make this using shop bought dry stuffing.
As you may know, I’m hoping a house move is on the cards this year. I hope I’m not getting ahead of myself but I have already started pinning ideas and asking Lewis what he would like if he gets a new bedroom. He has responded to my query and his wish is for his bedroom to be “yellow – brighter than the sun! With diggers and farms”.

Okay, there is no denying it, this Spanish potatoes recipe is not local to Northern Ireland! However, it uses potatoes so I’m thinking I can get away with it!
I actually came up with this recipe after buying a ready to cook convenience tray of Spanish Potatoes. They tasted quite yummy, so I just had a sneak peek at the ingredients and decided I would just make my own in future!
Determined not to be held back by winter cold’s and grey skies any longer, we decided one March day to visit Carnfunnock Country Park. Their website looks great and promises lots of activities for children of all ages, although it does say to phone in advance to find out which attractions are open. We didn’t do this which in hindsight was mistake. Still being classed as out of season, and being a Sunday morning, the only staffed areas which were open were the cafes.
